Garden Blend Bowl
Ingredients:
1 apple
1 cucumber, seeded and chopped
1/2 bunch kale (6 - 10 leaves)
1 green onion, chopped
1 garlic clove, crushed
1/4 cup chopped parsley
1/2 cup chopped cilantro or a dash of cayenne pepper
1/2 red jalapeno pepper
2 tablespoons light, mellow miso (chickpea)
1 tablespoon lemon juice
1 1/2 cups water
1 avocado
1/2 cup orange juice (The orange juice sweetens the soup. For a less sweet soup eliminate the orange juice and replace it with additional water.)
Procedure
1. Cut the apple in fourths, removing the core and seeds
2. In a blender, combine all the ingredients except the avocado and blend until smooth
3. Add the avocado and blend until smooth
4. Pour soup in serving bowls
5. Toppings for Garden Blend Soup: avocado, apple, red pepper. Finely chop the topping ingredients and sprinkle on top of soup and serve
