Mock Meatloaf
Ingredients:
1 medium onion, diced
½ cup chopped celery
1 carrot, grated
3 garlic cloves, minced
3 tbsp. olive oil
2 packages of beef-flavor Gimme Lean Beef
½ green pepper and ½ red pepper, diced
1 cup chopped nuts (walnuts or pecans)
½ cup oatmeal, dry
2 slices whole wheat, crumbled
3 tbsp. ketchup
1 tbsp. Spike or herb seasoning
1 tsp. salt
Coating Ingredient:
¾ cup barbecue sauce (optional)
Procedure
1. Sauté the onion, celery, pepper, carrot, and garlic in the oil over medium heat until soft
2. Combine in a bowl containing the remaining ingredients
3. Add sautéed vegetable and thoroughly mix
4. Press the mixture into an oiled loaf pan. Cover foil and bake at 375 degrees F for 30 minutes.
5. Remove the loaf from the oven and turn it out onto a baking sheet. Spread the barbecue sauce over the entire loaf
6. Cook uncovered for another 15 minutes.
