Mock Tuna
Ingredients:
2 cups walnuts, soaked 3 hours, drained and rinsed
2 cups chopped carrots
3 garlic cloves, peeled
½ medium sweet onion
½ cup fresh parsley
1 cup chopped celery
Juice from ½ lime
2 teaspoons Dulse & Kelp Sea seasoning powder
Celtic sea salt, to taste
½ cup Olive oil or Vegenaise mayo
Procedure
1. In food processor, place walnuts and carrots until well blended.
2. Add garlic and onion and process until the mixture is blended but still remain structure.
3. Place in a bowl and add chopped celery, parsley, lime juice, sea salt, dulse and kelp sea seasoning.
4. Add olive oil to moisten mixture.
5. Layer mock tuna on a bed of spinach or kale leaves and serve with pumpernickel or any dark bread.
