Raw Apple Pie
Ingredients:
Crust:
3 cups almonds soaked 4 hours
1 cup honey dates soaked 2 hours (save 1/3 for filling)
1 tsp. vanilla
1/3-1/4 cup of maple syrup or honey
Filling:
1/3 raisins soaked 1 hour
1/3 dates (chopped)
3 apples (shred) – Crispin, Fuji, Ginger Gold or Gala, any sweet apple will work
Save 1-2 apples sliced thin for topping on pie
1/4-1/2 tsp. cinnamon
½ tsp. apple spice
1 tsp. vanilla
Topping:
Sliced apples
Shredded coconuts (opt.)
Procedure
1. To mix crust in food processor, start with nuts, and then add dates, honey and vanilla.
2. Blend until the mixture sticks together slightly. Spread out in circular pie pan and up the sides of the pie pan to form a crust.
3. Mix together ingredients for the filling in food processor and place in crust. Top pie with thinly sliced apples and sprinkle 1/4-1/2 cup of coconut.
