      Scrambled Tofu

      Ingredients:

      1 tbsp. extra virgin olive oil
      2 tbsp. finely chopped onion
      1 red pepper, chopped
      3 garlic cloves, minced
      2 scallions chopped
      1 cup broccoli florets, steamed
      1 tomato, chopped (optional)
      16 oz. extra-firm or firm regular tofu, drained
      ½ cup mushrooms, chopped (optional)
      ¼ tsp. turmeric
      ¼ cup nutritional yeast
      2 tsp. salt-free Spike
      Dashed cayenne pepper
      Salt to taste

      Procedure:

      1.  Drain the tofu and squeeze it between paper towels to rid it of excess moisture.

      2.  In a bowl, crumble the tofu with your hands or a fork.

      3.  Use oil to sauté onions, pepper, garlic, and scallions in skillet.

      4.  Add tofu and remaining ingredients to skillet.

      5.  Cook until thoroughly heated.
